I'm sure there is some higher truth, I just doubt that humans are able to actually perceive it.

What really happened cannot be described, because human perception gets in the way. That's basically what the saying means, at least imo.I believe it was representing journalism and the struggle to report truth when relying on eye-witnesses.

I think that is exactly it Stephanie. Although he wasn't talking about journalism, it certainly could be applied there.
